Sabbath doesn't talk to anyone. People tend to avoid her anyway; those eyes of her give even me the creeps.
I don't know if there have always been demons in Gray's Point, but I do know one thing... this may have happened once before. There was a colony here in the early 1500's, isolated from the most of the others, and like the nearby Roanoke, it disappeared. Even the dead were missing from their graves. Like now, there were no signs of a struggle, and only a little blood. For the most part, it was like everyone got up and left. The incident is relatively unknown, whereas Roanoke Island was famous.
BTW, if you're investigating everything possible, I recommend staying away from the Mortems of Dheana and the Sons of Arkayis. Reports I got before my trip indicate that they are being hunted.
