Count all the EYES-could be the hardest puzzle in the world? ok puzzlers give the answer and explain why. Have fun -
Roney's FIVE year old snake is 'ROLEY.'Every night Roley escapes. Roney worries and gets no shut eye.Slimey Roley's eyes are yellow,he's golden eyed and COCKEYED.Roley easily sheds skin once yearly.Thus, Roley is ECDYSIAL!

And if you take the question quite literally, you should only count 'EYES' (capital letters), not 'eye' or even 'eyes'. Which brings the answer to either 0 or 1 (without or with the one in the question). Or, if small print is allowed, 3 or 4.

And if you want to max out also count Roney's eyes as he is mentioned. Or even 2 extra for every time snake is mentioned. You never know how the twisted riddlersmind wraps around a enigma and sticks a puzzle into a conundrum.
btw, Snake eyes? No pun intended I hope? If it is then I would say 2 dice totaling 42 eyes. or 2 when only counting the ones showing.

Adding to your first vein of thought, a COCK has two eyes, as well.
Also, there are eight we missed. Those of the skins Roley has shed each year.

the only "EYES" is in the last line. So count it or not.

Ecdysial? Did you mean "ectypal", and why did you capitalize certain words. You think you're making us think hard, but it's pretty immature to give us a riddle that's not thought-out and calling it the hardest riddle in the world. That, and please give us more to it than "look at the words".
I counted around ten "eye"s unless you are going to be smart and say something like "You dumb-butts! There are no eyes in a bunch of words! ROFLMAO!!!!!!!111one I so got you all!!"
