Like, you could see his organs?

I'd say off-white (creamy? ashy?). He looks dirtier every time, especially the helicopter view (P.S. Does anyone have some slow-mo of the beasty jumping at the copter?), probably from having the shit bombed out of him .

No, albinos have "translucent" skin. It means very pale and you cna see the veins and such clearly. However, it probably depends on what the lighting is.

We have a bite!

Here is what I think about the parisite bite. They bite the host and the 'venom' allows as much blood, plasma, water or what ever to flow. In the Monster, not such a big deal. They can bite, allowing large quantities of whatever they feed upon to flow. However, when they bite a significantly smaller life form, ie human, it "pops" them.
