I think it'd be pretty awesome if he somehow figured out how to combat the collective rather than just cower in fear and be totally helpless. Maybe he could figure each member out, one at a time, and pick 'em off!

This story seems like a tragedy. It is probable that Noah will die, and it is due to his flaws as a person that bring it upon him; even though, truthfully, nothing escapes Slendy--not even dead people.

Well, Adam did say the end would be bittersweet, so maybe... He makes it, but at the cost of someone else being harassed by Slendy/Observer.

You really think Noah screwing a (probably) innocent person over for his own benefit would be bittersweet? I get what you're saying, but I think that would just cause him to be seen in a much more negative light and people wouldn't even care as much that he lived.

Bittersweet ending, and your theory in mind though, I think a plausible idea is that Noah is going to meet somebody within the next year who also becomes tormented by Slenderman and friends. Noah comes to rely on her, as she does him. (Think Jessica/Marble Hornets.) In the end Noah ends up sacrificing his life to save her. He dies, and the woman who by then gets a sufficient amount of character development so that the audience actually cares, lives.

a cool ending I thought of is that you believe everything is all ok. Noah has finally beaten the odds and is posting one last video saying goodbye. Then the very last frame of the video (like every other video in this series) is an observer-ish picture saying goodbye

A really out-of-left-field bittersweet ending could be Noah succumbing to the collective just like they keep saying he will - but at a point when it becomes clear that this is actually the lesser of two evils. The Observer's been fairly consistent about saying that Noah will sooner or later serve the collective of his own will, and it's been regularly hinted that there's something in Noah's past he either doesn't remember or isn't telling us which might explain why Noah is in the spotlight.

Perhaps by the end of the series Noah ends up remembering whatever it is and decides that giving up and surrendering to the collective is better than carrying on living with that memory tormenting him. Or possibly it turns out that the nature of the collective's manifestations and tactics reflect the personality of the current lead vessal - the one "in session" - and Observer happens to be a particularly bugfuck one: perhaps what the collective is trying to accomplish here is genuinely benign, but it looks malign because of Observer's twisted tactics. In that case, Noah might end up joining the collective and willingly taking up the next session in order to make sure that the next target has an easier time of it.
